Risotto is a well-known rice dish from Italian cuisine. It differs from normal rice in that during cooking the grains become sticky and form a creamy bulk. The better risotto is made from Carnaroli rice.
This type of rice is somewhat harder and after cooking it is soft on the outside and more firm on the inside. So just like pasta, typically 'al dente'. Adding dried black truffles to the rice creates a delicious truffle risotto. You make the tastiest truffle risotto by adding (Parmesan) cheese, truffle sauces or truffle oil.
