Soil: Sandy, calcareous, sub-alkaline reaction, low nitrogen content and good levels of magnesium
Fermentation: The precious juice is then transfer into stainless steel vats where first filtration takes place at controlled low temperatures, with fermentation beginning only after the temperatures are raised.
