Harvest: Manual harvest into wood boxes, dried in the loft.
Vinification: After being dried in the loft and prolonged maceration/fermentation, the wine is moved to French barriques for 24 months, then transferred to steel tanks.
In the Cellar: Once moved to the French barriques for 24 months, the wine sits in steel tanks for several months, and is then left to rest in the bottle.
Pairings: Red meat dishes, roast meats, best near the end of the meal with hard paste, and extremely seasoned cheeses.
