Soil: Very clayey, calcareous with a strong marl presence. Sub-alkaline reaction soil
Harvest: Manual harvest, as late as possible.
Vinification: Maceration for 50/60 days, aged 36 months in oak barrels
In the Cellar: 50/60-days maceration, fermentation occurs in special wood vat, open at the top. Aged in oak barrels for 36 months.
Serving Temperature: 16 degrees C°
Pairings: civet rabbit, braised meat, simply by itself.
