Vialone Nano is a very important type of rice in Italy. Grains are medium sized, long and plump, when cooked it's volume increases considerably due to it's good capacity to absorb.
Vialone Nano rice—from renowned Italian rice producer Principato di Lucedio—is beloved in the coastal Veneto region of Italy. These pebbly, pearl-like grains are shorter and rounder than other Italian rice varieties.
The delicate flavor of the rice lends itself well to fish, seafood and vegetable-based dishes. In Venice, you might enjoy Vialone Nano rice in a risotto studded with tiny vongole and flecks of parsley or one with fresh squash blossoms gently folded in.
Almost always used for risottos because of it's particular flavor absorbing qualities. Nevertheless it is also a perfect pair for meat or fish dishes.
