Where do you source your fresh truffles?
We work with truffle hunters sourcing fresh truffles from Umbria, Italy and other uncontaminated territories in Italy, where the natural ecosystem allows the development of the most valuable Truffle species. Our truffles are imported twice in week during their peak seasons.
How do you determine the quality of the truffles you choose?
Our truffle selection process is very strict. What determines the quality of truffles is a combination of the variety of truffle, the time of year, the macro and micro climatic conditions, and the skill of the local hunter.
Are Fresh Truffles Organic?
Truffles will only grow in pristine conditions; they will not tolerate any type of contamination that may explain why they are so rare and valuable. However they cannot be sold as “Organic” unless the plantations or wild forests they are hunted from are certified as Organic.
How to store fresh truffles?
Fresh Truffles are best eaten as soon as possible. When you receive your truffles, we suggest you immediately wrap them individually in kitchen paper and place in an airtight glass jar in the refrigerator until use. Please don’t keep them for more than one week!
How long does it take to receive my delivery of fresh truffles?

What are the best ways to use fresh truffles?
Enjoy your truffle raw (it’s considered a sin to cook the culinary gold), thinly shaved directly over of a finished dish. We recommend about four or five grams per (lucky) person. Best grated or sliced with a truffle slicer directly on to food and into sauces or soups, just before eating.
When is the best time to buy fresh truffles?
We normally announce the arrival of our fresh truffles a week or two after the official opening of the season before purchasing fresh truffles, as early season tubers can be disappointing. We want to guarantee your fresh truffles are delivered in their peak.
How long do fresh truffles last? Truffles are best enjoyed as fresh as possible, so you can fully experience the full deep aromas and earthy flavors. Don’t wait more than two to three days to enjoy after you receive your whole truffle, and never buy a pre-cut one, unless you plan to use it immediately
Do I clean fresh truffles?
To clean fresh truffles, do not wash or submerge in water; just wipe the exterior down with a brush prior to using. According to Brad, white truffles will last for around five days; black will keep for over a week.
Can I freeze fresh truffles?
While they are best eaten right away, If you want to freeze fresh truffles they will retain their flavour and aroma for a short while if frozen in olive oil or vegetable stock.
