Organic Pecorino Wine from Abruzzo
Grapes : Pecorino (from organic farming)
Type of soil: Clayey - calcareous

Storage: 4 months in steel and 2 months in bottle
Vinificaition : For our Pecorino, after having harvested the grapes in the early hours of the morning, we carry out the Cryomaceration in the Press at 6 ° C for 6-12 hours. Then the free-run must is cold stabilized, about 4 ° C, in order to subsequently ferment a must that is already clear and purified from the lees. From here the fermentation takes place at 15 ° C and then the battonnage on the noble lees for a few weeks.
Nose : Intense, persistent and fine, it has the typical aromas of exotic fruit, citrus fruits, flowers and aromatic herbs, very elegant and refined. This organic white wine shows fresh citrus and floral notes with a mineral, elegant profile.
Taste : Dry, warm enough and soft. Particularly fresh and sapid, very mineral with elegant citrus and dried fruit flavors, dates, apricot jam, with hints of green vegetable essences; of remarkable persistence and pleasantness, able to positively evolve over time. Excellent as an aperitif and with first courses, excellent with fish, especially with raw dishes.
