Fresh Black Summer Truffles Season: May - September

The Italian Black Summer truffle's fruiting body has a rough surface covered with small diamond-shaped projections, molded by stones surrounding it in the soil. It has a rich woodsy aroma with flavors of garlic, wild mushroom and earthy hazelnut undertones. 

Our summer black truffles are grown and cultivated  in northern Italy.

This truffle is called Summer Truffle or “Scorzone” in Italy, due to its roughness.

This is one of the most popular truffle variety as it grows in many kinds of terrain (especially near oak trees, hazelnut and pine trees).

Highly valued for its culinary uses, Fresh Black Summer Truffles taste have a mouthwatering sweetness, resembling hazelnut. Since the summer truffle has a more delicate flavor, it shouldn’t be used in dishes that are cooked. Like good extra-virgin olive oil, the heat will destroy the flavor. Instead, shave thin slices of the truffle onto dishes to finish them. A little goes a long way!

They can be shaved fresh as a finishing element or infused into sauces to add depth. The volatile compounds that release truffles' distinct aroma are compromised when overcooked, but fats can capture and encapsulate those aromas. Thus, it is often that they are paired with rich foods such as meat, cheese and eggs. Black Summer truffles pair well with lobster, caviar, fois gras, pasta, cream sauces, garlic, shallots, light-bodied vinegars, mascarpone, aged hard cheeses, citrus and herbs such as tarragon, basil and arugula. Truffles will keep, dry and tightly wrapped or stored in rice, for one to two weeks. The summer truffles taste is really light compare to the winters truffles and also this is the reason why it cost less.

How To Use

Recommended uses: Fresh truffles are consumed raw. They pair perfectly with delicately flavored dishes. Slice and toss with pasta. Stir into a finished risotto dish, Mix with olive oil to top bruschetta. Fold into mashed potatoes. Add to a cheese butter sauce, fish, seafood, or chicken. Shave over scrambled eggs or an omelet.

-White truffle is more delicate and should only be sliced ​​raw over hot dishes, so that it can delicately release all its aromas, enhancing its harmonious bouquet. Slice the truffle thinly and evenly, to avoid ruining it, which is why it would always be better to use a truffle slicer.

-Black truffles have the ability to resist temperatures more. In addition to the possibility of being sliced ​​raw directly on the plate, they can also be grated without major problems during the preparation of the dish, a few minutes before the end of cooking, taking care not to burn them.

Where do you source your fresh truffles?

We work with truffle hunters sourcing fresh truffles from Umbria, Italy and nd other uncontaminated territories in Italy for white truffles like Marche, Piedmont and Toscana, where the natural ecosystem allows the development of the most valuable Truffle species. Our truffles are imported twice in week during their peak seasons. 

How to store fresh truffles?
Fresh Truffles are best eaten as soon as possible. We suggest no more than 5 days, because they begin to lose weight and lose their freshness.  When you receive your truffles, we suggest you immediately wrap them individually in kitchen paper and place in an hermetic container, and change the paper every day. 

Should I Store My Fresh Truffles in Rice? 

We don't suggest storing fresh truffles in Rice because it absorbs too much humidiy, making it dry faster. 

How do you determine the quality of the truffles you choose? 

Our truffle selection process is very strict. What determines the quality of truffles is a combination of the variety of truffle, the time of year, the macro and micro climatic conditions, and the skill of the local hunter.

How long does it take to receive my delivery of fresh truffles?

All truffle orders are received the next day.

What are the best ways to use fresh truffles?

Enjoy your truffle raw (it’s considered a sin to cook the culinary gold!), thinly shaved directly over of a finished dish. We recommend about four or five grams per person. Best grated or sliced with a truffle slicer directly on to food and into sauces or soups, just before eating.

Do I clean fresh truffles?
