Grapes de-stemmed and pressed in a soft way, maceration for 6/8 days in steel tanks with a temperature below 28 ° C, with punching down and short pumping over.
The specific precautions, foreseen by the vinification protocol, aim to preserve the natural richness of aromas and the gustatory freshness of the grape.
It goes well with cured meats, crescentine, tigelle and why not tortellini in broth and Bolognese dry pasta
