Lambrusco P.G.I Puianello Rosso Pet Nat Organic, Unfiltred
Creamy foam with fine and persistent bubbles, ruby red color but slightly turbid due to the yeast in suspension. Aromas of ripe red fruits tending to spices. The palate is dry persistent, full and very decisive with good acidity.

Grapes : Lambrusco Marani, Maestri, Salamino
Harvest : Depending on the weather but normally at the end of September.
Vinification : Criomaceration at 5° C for the preservation of the primary aromas of the grape. The must wraps with skins for two nights at low temperature without starting alcoholic fermentation and another two days with fermentation graft to extract color and tannins thanks to the alcohol component. The subsequent fermentation occurs in the bottle, according to the Ancestrale Method; the maturing and fining of the wine is due to the continue and natural fermentation on its years that, once dead, release the wine the substance contained in them. The bottles remain in aging for at least 10-12 months, without the disgorgement.
Food pairings: It goes well with dishes of some commitment and red meats, salami and cheeses.
