Wine with a great deal of care and craftsmanship behind it. The passion for native Piedmontese grapes and the collaboration with the family winery in Rovereto di Gavi really shines through in the process. The wine undergoes fermentation at a controlled 15°C for a lengthy 23 weeks speaks to a delicate approach that certainly preserve the fresh, expressive characteristics of the Cortese grape. The bâtonnage technique adds richness and texture to the wine, which give it that round, smooth finish that makes Gavi so enjoyable.
