Area of Production: San Quirino, in a temperate warm climate with significant amounts of rainfall, 98 m above seal level
Soil: Limestone, dolomite from glacial melt-water
Vinification: Handpicked, then soft pressed with pneumatic presses
In the Cellar: Fermentation takes place in stainless steel tanks, after the wine is kept on fine lees until bottling
Alcohol: 12.5-13 %
Serving Temperature: 10-12 degrees C
Pairings: Light soups, fresh cheeses, cured ham, white meats, and fish.
