Area of Production: San Quirino, 98 m above sea level, with a temperate climate with significant rainfall distributed over 94 days out of the year
Soil: Sediments from the Cellina River, made up of limestone and dolomite created from melted glacial water
Vinification: Hand picked and soft pressed with pneumatic presses
In the Cellar: The fermentation first takes place in stainless steel tanks, then is kept on lees until it is time to bottle
Alcohol: 12.5-13%
Serving Temperature: 10-12 degrees C
Pairings: Pairs well with spicy first courses, great as an aperitif, accompanies creams and soups, middle aged cheeses and cured ham.
