
Pearls with Balsamic Vinegar of Modena PGI are small spheres which contain our Balsamic Vinegar. Obtained through the spherification of sodium alginate, same that is used in molecular cuisine it consists on a basic process that allows the transformation of liquids into balls. Sweet and sour taste and well balanced, with the right crunchiness and pleasing to the palate. Ideal to give a touch of refinement and taste to the plate. Similar in appearance to caviar Balsamic Gems are strong and elegant in their impact and they are the perfect enhancement for high-class cuisine, used in many restaurants.
Density 1.24 / Acidity 6% High density of balsamic vinegar equals to more aged vinegar. To make our pearls we use 1.24 compared to our competitors who use vinegar of only 1.07 density.
Use : Add a unique flavour and character to meat and fish dishes, finger foods, starters, vegetable or fruit salads, ice-cream, creamy puddings and confectionery. However, the best way to eat them is on a risotto or simply by let some balls drop on a piece of cheese.
