Carnaroli is considered one of the best Italian rices. The center of the Carnaroli grain, known as the "pearl", is the rice starch that releases during cooking, producing a creamy risotto. Its excellent cooking qualities make it ideal for preparing risottos of the finest quality. Although less well-known in the U.S. than Arborio rice, Carnaroli is actually more highly valued by Italian chefs. Try it in place of Arborio the next time you make risotto. You'll be surprised by its super-creaminess and recognize why Carnaroli is known as "The Caviar of Rice." Carnaroli is one of Italy's premier rice, captures the elegance of the earthy, with Black truffle.

Use:Ā toast the rice for 1 minute in a pan with a little oil.Ā Meanwhile bring to boil vegetable broth or salt water;Ā joined gradually the broth to the rice, stirring.Ā At the end of cooking stir in butter and Parmesan or with ourĀ Sauces TruffleĀ Ā to make the tastiest dish.

Method of preservation:Ā Store in a cool, dry place, away from light and heat sources.

Use: for optimal cooking we recommend using plenty of water. When boiling, add salt, pour the dough and mix gently after it has softened. Cooking time 2/3 minutes. Season with a little butter and serve hot. Add some cooking water at the end to keep the moisture

We advise you to cook black truffle tagliolini for two minutes in a large volume of boiling water, drain and finish cooking in a non-stick pan seasoning.
