Harvest Time: SECOND HALF OF OCTOBER
Vinification: Manual selection of the best bunches into 15 kg crates, in the oldest vineyards located in front of our cellar and which have the best exposure and adaptation to the vineyard of the place. On arrival at the winery, the grapes were destemmed and lightly pressed avoid lacerations in the skins, left to ferment with the inoculation of selected yeasts in steel vats with an automatic cooling and pumping over systems. Pumping over begins when an alcohol volume is reached which permits the extraction of a good quality of tannins in such a way that these, by binding with
the colouring substance, stabilise it over time.
Fermentation : Alcoholic fermentation of about 15 days. After separation from the skins, the wine underwent malolactic fermentation in steel at a controlled temperature. At the end of this process, the wine was decanted and aged in barriques and tonneaux for 18 months. After bottling, the wine continues to age for no less than another 12 months in the bottle.
The nose: struck by an emphatic eruption of delicious notes of ripe red fruits and field violets, intertwined with a balmy hint of eucalyptus, liquorice, white pepper and cinnamon. It also embraces notes of citrusy elegance, as well as the boozy, spiciness of kumquat jam, woven into the deep tones of ripe plum. Hints of cocoa powder and clove pop up in middle and base notes.
On the palate : Vibrant, its true rock ‘n’ roll soul is revealed: warm and embracing, intense and harmonious, with a considerable tannic texture that provides its structure and punch; not forgetting the elegant and unforgettable finale, masterfully reflecting its home territory, maintaining an optimal level of concentration and freshness and a lingering persistence that is not to be missed.
