The Black Truffle Carpaccio is part of the Jimmy Truffle Preserved category . These delicious truffles slices, called "Carpaccio", are produced exclusively by fresh seasonal truffles. The internal grain and the maturation guarantee the same sensation you get when you taste the fresh truffle. The sterilization treatment to which the jars are subjected changes the color of the grain in the Carpaccio, which is generally white in fresh truffles, making it uniform with the color of the pulp of the truffle.
